Have you heard? CHARCUT is officially coming to University District! The newest CHARCUT location will open its doors this spring inside the recently opened Alt Hotel University District Calgary. Read on to learn more about the award-winning chefs behind this great Calgary gem and what you can expect at the newest location.

The Story Behind CHARCUT

CHARCUT is a beloved Calgary roast house founded by Connie DeSousa and John Jackson. CHARCUT first opened in 2010 at the Le Germain Hotel on 9th Avenue, and appeared in Air Canada’s enRoute Magazine as one of the ‘Top 10 New Restaurants in Calgary” that same year. 

With house butchered meats, seasonal menus, thoughtfully created cocktails, local craft beers and an open kitchen, CHARCUT has certainly put Calgary on the culinary map.

In addition to CHARCUT, DeSousa and Jackson also opened sister restaurants in Calgary’s East Village, Charbar in the Simmons Building in 2015 and Chix Eggshop inside the East Village Alt Hotel in 2019. 

They also have a fully operational butcher shop located in their Le Germain location. Started during the pandemic and due to an abundance of product as a result of health restrictions, Jackson and DeSousa decided to go back to their roots by preparing homemade cured meats, charcuterie boards, various cuts of Alberta beef, sausage, cheeses, bacon, signature olive oil and more. 

Meet Co-Owners, Connie and John

Connie and John, the co-owners of CHARCUT, have mastered the art of working together as partners having opened many critically acclaimed restaurants together.

Connie graduated from culinary school at the top of her class and soon after met her mentor, John Jackson. The two instantly knew they would be business partners and started making plans to make a mark in Calgary’s culinary scene. Today Connie is one of Canada’s most celebrated chefs, who you might recognize from her appearances on Top Chef Canada, Top Chef All Stars and most recently a judge for the Food Network’s Fire Masters. 

“My passion for cooking is rooted from my parents. My mom and I used to love watching cooking shows together and immediately ran to the kitchen trying to recreate whatever was on the TV,” says DeSousa. “I always thought I was going to be a professional ballerina, but turns out cooking was my real passion and I have loved every day that I’ve spent as a chef.”

For a few years, Connie moved to the United States to work as a chef for various restaurants, but later returned to Calgary to start her CHARCUT adventure alongside John. 

John started cooking as a teenager out of necessity. The youngest son to a single mom of three kids, working multiple jobs and studying at university, John did what he could to help out. Eventually, he discovered a true passion for cooking and knew that it would be a huge driver in his life. Little did he know that he would become one of the top chefs and restaurant owners in the city. 

“I decided to study culinary arts at SAIT, where coincidentally Connie later studied. I hired her right after she graduated from SAIT and the rest is history,” says Jackson. “It’s great to look back and reflect on how far we have come as a team.”

Introducing: Connie and John’s Pizza

In addition to CHARCUT, Charbar and Chix Eggshop, Connie and John have also recently opened a new concept, Connie and John’s Pizza. With two locations, in Marda Loop and East Village, Connie and John’s is known as, ‘pizza you want to eat.’

In addition to CHARCUT, Connie and John’s Pizza will also operate out of the Alt Hotel Calgary University District. An exciting addition for residents of U/D and guests of the Alt Hotel.

The third Connie and John’s Pizza will be located inside the Alt Hotel in U/D, with a walk-up take out window accessible from Retail Main Street. the hotel lobby.

Everything to Expect at the New CHARCUT in University District

The new CHARCUT will be almost the same size as its existing downtown location with a similar menu and will have a new design reflective of the original location. The restaurant will have 80 seats inside with an additional 60 seats on the three-season patio, as well as a 16-seat private dining room called ‘The Butcherina’, which is an ode to Connie’s background as a ballet dancer.

The restaurant will offer an open kitchen concept and modern design, with a glass window overlooking the full production hanging butchery, visible from any angle within the restaurant. Private events will be a huge draw for Butcherina, with many already lined up following the spring grand opening.

The construction of the future 15-top bar in the CHARCUT University District location, which will also feature a fireplace with soft seating and full-service butchery. 

The new CHARCUT will offer a daytime happy hour and fireplace soft seating for a more relaxed experience, along with a refreshed brand. John shared that the original CHARCUT logo was developed from a ‘how to design your own logo’ CD, proof that the modernized brand look was well overdue. 

The addition of CHARCUT to the growing list of dining options at University District is helping turn the neighbourhood into a true foodie scene. The grand opening this upcoming spring is highly anticipated by both residents and visitors alike. Stay tuned for details. 

University District is a natural hub for community connection—love included! Since February is the month of love, we wanted to introduce you to some community members with heartwarming love stories to share!

U/D’s Retail Main Street is home to restaurants, shops…and some love stories too.

A University District Love Story

You never know where you’ll find love, whether it be in a grocery store, on an airplane or on University District’s Retail Main Street. That’s where Retail Main Street next-door neighbours— and now husband and wife—Chitra and Abhinandan met! Chitra is BarBurrito’s owner, and Abhinandan is the owner of Osmow’s.

Rewinding to August 4, 2021, Abhinandan was preparing to host a Friends & Family event at Osmow’s in advance of the grand opening. He stopped in at BarBurrito, his new next-door neighbour, to invite the owners to his event. Little did Abhinandan know his future wife and father-in-law would be the neighbours accepting his invitation. Exactly one year later, on August 4, 2022, Chitra and Abhinandan tied the knot, marking the beginning of the rest of their lives together. 

“I never expected to find love doing what I love, but I couldn’t be more thankful that University District brought Abhinandan and I together in the most unexpected way,” says Chitra.

Each love story is special, but this Retail Main Street love story has a special place in our hearts. Be sure to stop by and show them some love this season! A Story of Unconditional Love

February is the month of love with Valentine’s Day but Family Day is another opportunity to celebrate those you cherish. In the heart of University District, AdaptAbility is another beautiful U/D love story that embodies two parents’ love for their child. 

AdaptAbility offers an array of support, including developmental toys like fidget spinners, sensory integration tools like stress balls, adaptable clothing, mobility devices and assistive technology. Tara Nelson, the founder and president of AdaptAbility, started AdaptAbility with her husband after experiencing the frustrating process of finding clothing, toys and aids for her son living with special needs. Her motivation bloomed from a mother’s unconditional love for her son and desire to support other families facing similar challenges.

Tara, with the support of her husband, founded AdaptAbility to provide support to people and families with diverse and special needs. AdaptAbility is more than a store; it is a community built on love, support and a commitment to inclusivity. Today, the pair operates the business as a team, with Tara focusing mainly on logistics, social media and day-to-day operations while her husband focuses on ordering products and accounting. 

Says Nelson, “Our favorite part about the store is meeting the amazing families and individuals within the community and being able to help make their lives better. We also love connecting with companies who are like minded and have the same goal and mission to help people.”

To keep the business running smoothly while also attending to their family of four, the Nelson’s rely on the support of their friends and family who generously volunteer their time to help out at the store. 

“We fell in love with University District as soon as we visited. We loved that it had a tight-knit community feel to it and that everything was within walking distance. We knew it was the perfect place to foster an inclusive environment for AdaptAbility,” says Nelson. “It was also very important for us to be close to the Alberta Children’s and Foothills Hospitals, as well as the Rotary Flames House, Ronald McDonald House and the Child Development Center.”

As for the future of AdaptAbility, Tara hopes to grow the business and help as many families as possible to make life more inclusive for their loved ones. The team was recently part of the U/D Winter Pop-Up along with The Straz Strong Foundation which included a sledge hockey demonstration showcasing accessibility in sport.

Sledge Hockey Demonstration

U/D retailer AdaptAbility and The Straz Strong Foundation, founded by former Humbolt Bronco and adaptive athlete Ryan Straschnitzki, have joined forces for an interactive sledge hockey demonstration at U/D’s February Winter Pop-Up! Join us for the unique opportunity to try your hand at maneuvering a sledge, a specialized sled mounted on two runners used in sledge hockey! This demonstration is a fun and educational opportunity to learn about sledge hockey and the importance of adaptive sports. 

Skating at Central Commons Park

No matter which U/D Winter Pop-Up you attend, be sure to bring your skates and enjoy a winter day at University District’s Central Commons Park outdoor ice rink. Skating is the perfect way to finish the afternoon as the sun goes down on U/D’s Winter Pop-ups, but the University District ice rink is open daily from 8 a.m. to 10 p.m., so the fun can continue even after the event concludes! 

Enjoy ice skating with friends and family at University District’s Central Commons Park. 

Enjoying U/D’s Winter Pop-Up events is easy to do, with the convenience of free heated underground parking. University District offers free two-hour surface lots and a free three-hour heated underground parkade (entrances are beside Save-On-Foods and Staples). License plates must be registered at one of the Calgary Parking Authority machines located at each lot and in the parkade.

UCPG has a New President and CEO: 

In December, University of Calgary Properties Group (UCPG), the developer for U/D and UIQ, announced its new President and CEO, Novy Cheema. Cheema has more than 15 years of experience working in real estate and development and joins UCPG after leading Alberta and prairie real estate development activities for a major North American development and construction company. Prior to this, he practiced commercial real estate law and also worked as counsel for a Calgary-based development company.

Builder Announcements:

University District celebrated the groundbreaking of Block 15 by Gracorp Properties (stay tuned for details). Block 15 is a new purpose built residential building and will be the largest building in University District to date, consisting of 303 rental units in an eight story midrise and 16 story tower. 

The launch of Autumn by Homes by Avi took place earlier this year in May. The six-storey condominium project will offer 162 residential units including studio, one- and two-bedroom units set atop the Retail Main Street. The project is 50 per cent sold and construction is expected to begin in 2024. Stop by the Discovery Centre, located at 4410 University Ave NW, Calgary, AB T2L 2K7 to learn more about the project.

Community Events in 2023: 

The U/D Night Market returned this year from May to September and included the addition of  Holiday Edition Night Markets in November and December. In partnership with Marketspot, the U/D Night Market offered members of the Calgary community the opportunity to shop local vendors, experience live entertainment and connect with other residents in University District. 

U/D is a great community for dog lovers alike. We also hosted our fourth annual Tails & Treasures event in June. With performances from the Global Pet Foods SuperDogs™, this event encouraged members of the community to head down to U/D with their furry friends to take in the festivities and participate in a best costume and best trick contest!

The annual U/D Block Party took place again in September and was a great opportunity for people to connect and see all the new additions to U/D including the growing list of retailers. People from across Calgary flocked to the community to partake in the fun. From bouncy castles to free samples, amazing roaming characters and a fan favourite; the Brasstactics, there was something at this event for everyone. 

Save the Date: Central Commons Park will be hosting two Winter Pop-Ups on Sunday, January 28 and February 18, 2024 to help people warm up to winter. Featuring music and entertainment, these free outdoor events are a fun activity for the whole family (pups included!).

New Retailer Announcements

This year, we proudly announced the addition of many retailers coming to U/D in 2024. If you missed anything here is a quick recap: 

Seed N Salt is an amazing restaurant helping Calgarians feel good. Offering healthy soups, salads and other options in a quick service format; they believe that fast food does not have to be filled with ingredients that hurt our bodies. With two existing locations in Calgary’s Mission and the Downtown, this beloved restaurant is a highly anticipated addition to University District. 

UNA Pizza + Wine serves California-inspired pizza and side dishes using ingredient-focused recipes with almost every element made in-house. With existing locations in Calgary, Saskatoon and Banff, this trendy pizza spot will be the first of its kind in U/D.

Native Tongues Taqueria with much-loved, existing locations in the Beltline and Brittania, Native Tongues offers authentic Mexican cuisine and drinks. This restaurant is sure to be a popular stop in University District once it opens in 2024. 

Lagree YYC is the first Pilates studio to call U/D home. Voted Top Fitness Center in Calgary for five consecutive years, Lagree will offer its patented Lagree Method to NW Calgarians suitable for all fitness levels. The Lagree Method incorporates slow and controlled movements to build muscle strength, muscle endurance and flexibility using a patented machine called The Megaformer.

Easy Blink Optometry will soon offer patients specialty eye treatment and designer eyewear in its new University District location. Expected to open in early 2024, this new offering will be very convenient for U/D’s residents as well as Calgarians living in other NW communities. 

Olive Nail Bar will be the first nail salon to call University District home and they are very excited to soon service clients from the nearby area. Offering luxurious manicures, pedicures and other services, a local nail bar has been highly requested in this community.

Other Exciting News from University District: 

In June, The Alt Hotel Calgary University District officially opened its doors and welcomed guests to stay. There was an official launch event for the hotel in October with announcements coming soon on their restaurant and coffee shop.

Block 23 was officially fully leased this year and U/D continued to welcome office tenants. Businesses that opened office space included those specializing in eyecare, hearing, medical services and more.

In August, U/D was named an international finalist in Fast Company’s Innovation by Design Awards in the Urban Design Category, which recognizes built projects that improve cities and neighbourhoods from around the world

It is important to note that the University Calgary Outdoor Centre is not able to accommodate walk-ins, so be sure to book your skate rental in advance!

Ingredients:

• 2 cups of the milk of your choice
• 2 tablespoons of cocoa powder
• 2 tablespoons sugar
• ¼ cup of chocolate chips (melted in the microwave or on the stove)
• Optional: Whipped cream, marshmallows 

Directions:

Carefully warm two cups of milk, ensuring it doesn’t boil. Add the cocoa powder and sugar and stir until well combined. Add the melted chocolate chips to provide an extra dose of chocolatey goodness. Top it off with whipped cream, marshmallows or your other favourite toppings. For the adults, add some extra indulgence of an ounce of Irish Cream or whiskey for a tasty flavour twist.
