Looking for a spot to enjoy your box of baked goodies? Make your way to U/D for an afternoon stroll around the pathways of North Pond or NW Commons Park. The beautiful surroundings make it the ideal place for a break, whether you’re on your own or with your family. 

 

Bake, Bake Away: Alfajores

 

At first glance, the alfajor is entirely unassuming. But this classic South American sandwich cookie with its crumbly, buttery texture and layer of silky smooth dulce de leche, is a petite and decadent morsel of heavenly goodness. There’s a reason this simple cookie defines the café scene all across Latin America.  

 

Try your hand at making a batch of alfajores. So soft, they will melt in your mouth!

 

 

Ingredients

 

  • 1 ½ cups (200g) of all-purpose flour
  • 2 1/8 cups (300g) cornstarch
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 and ¾ sticks (200g) unsalted butter, at room temperature
  • ¾ cup (150g) granulated sugar or 1 ¼ cups (150g) of powdered sugar
  • 1 teaspoon grated lemon zest, optional
  • 3 large egg yolks
  • 2 teaspoons vanilla extract
  • 350 g (12 oz.) dulce de leche, for filling
  • ½ cup unsweetened shredded coconut, for rolling

Step 1: Combine dry ingredients

 

In a medium bowl, sift dry ingredients until well combined. This includes flour, cornstarch, baking powder and baking side. Set aside.

 

Step 2: Mix wet ingredients

 

In a separate bowl, combine wet ingredients, which include butter, sugar and lemon zest. Using an electric beater on medium speed, mix until light and fluffy (about 3 minutes). Beat in egg yolks and vanilla extract until just combined.

 

On low speed, gradually add the dry ingredients to the wet mixture and beat just until combined. Once well blended, form the dough into a slightly flattened disc. Wrap with plastic wrap and chill the dough in the refrigerator for one to two hours.

 

Tip: Do not over mix the dough or your Alfajores will be tough!

 

 

Step 3: Let’s roll

 

Once chilled, roll the dough to a 1/8 or 1/4 inch thickness. For easy rolling, allow the dough to sit on the counter for a few minutes to soften.  

 

Cut out into rounds using a round cookie cutter. Place on a baking sheet lined with parchment paper and bake for 7 to 10 minutes at 350 F or until cookies appear golden brown at the edges. 

 

Tip: To prevent spreading, place your baking sheets with cookies in the freezer or fridge for at least 15 minutes.

 

Step 4: Sandwich your cookies and time to eat!

 

Take your completely cooled cookies and spread the bottom half with dulce de leche (one teaspoon). Once the bottom half cookie is covered, sandwich together with the top half, pressing slightly so that the caramel oozes out of the sides.  Then roll the sides in powdered sugar or shredded coconut and eat away!

 

Tip: Store cookies at room temperature in an airtight container for up to a week or freeze for up to two months.

Art hack: When choosing wood, consider a natural wood such as Pine, Aspen, Poplar, Birch or finished lumber including plywood. All great options!

Container Yourself with a Fresh Edible Garden

 

Pick a pot. Pick a plant. And pick the right spot. Before you know it, perky lettuce, delicate herbs and edible blossoms are all yours to enjoy when container gardening from home.

 

The juicy richness of an organic heirloom tomato warmed from the sun, enjoyed minutes from being gently tugged from its vine only tastes better when grown by your own two hands!

 

The rewards of growing your own garden – whether on your patio, windowsill or in your yard – means that you connect with nature and can enjoy healthy and flavourful efforts from flexing your green thumb.

 

Sometimes a little know-how goes a long way, so we turned to Calgary gardening expert and co-author of No Guff Vegetable Gardening, Donna Balzer for some insights to create an edible garden of our own at home.

 

 

 

Where to Start? Grow What You Love!

 

If you are a gardening newcomer, start with a small natural container to get the first taste of that ‘garden-to-table’ experience. Pick your favourite culinary flavours and map out a plan for a small garden, even if your ambition is limited to a patio, balcony or entryway container.

 

Container gardens are especially perfect for nutrient-rich herbs and root plants that you can plant now for fall harvesting. Did you know you can plant Bull’s Blood red leaf baby beet (Donna’s favourite) or bright, orange, chubby baby carrots now for Fall? Adorable options that are fast growing and delicious!

 

Another Calgary grow-your-own-food favourite of Donna’s is the brightly coloured nasturtium plant. They grow fast and can be started from seed, typically germinating in as little as a week. All parts of the plant are edible from the flowers to the leaves.

 

Last on the list: dahlias. “These beautiful plants were once farmed as a root crop and now are enjoyed for the beauty of their blooms. Try nasturtiums or dahlias for the best of both worlds in one plant and use the flowers to season your dishes.”

 

 

Donna says, “in small gardens, you can grow the most nutritious plants. Adding fresh, beautiful herbs to your quinoa salad pumps up the flavour and are packed with vitamins. It’s a great way to get healthy while pleasing your taste buds.”

 

Think parsley, cilantro, basil, mint and chives!

 

TIP: Visit a local nursery for root vegetable seeds or starter plants or pop into a greengrocer for small pots of herbs you can transplant at home.  A 14” pot is suitable for as many as 3 nasturtium plants, for instance.

“Now that the YYC weather is settling, there is still time to plant if you focus on herbs,” says Donna. “And if the nutritional value of small greens is not enough to excite you, how about the fact that container gardening can also enhance your decor and your feeling of togetherness?”

Race Potatoes!

 

Pick up some older organic potatoes from your favourite nursery or grocery store (we have a soft spot for Save-On-Foods) and find the potatoes that have grown eyes. Plant your potatoes in a container with your name on it and you are off to the races. See who can grow the tallest plant or the one with the most blossoms. The winning potato? The one that is bountiful with more potatoes!

 

“There is a simple and undeniable joy that comes with pulling potatoes,” says Donna. “And if you are in no rush to eat them, keep watering your crop and more will grow.”

How Does Your Garden Grow?

 

Whatever you opt to plant and grow, here are some simple guidelines so you can harvest at home!


1. Keep it natural

 

Choose a natural container at least 6” deep with drainage holes. Classic terracotta pots are a great way to begin your project.

 

2. Select a good soil

 

Pick up some organic soil, seeds or starter plants.

 

3. Plant

 

Ready-started plants to nurture like chives. Perfect for kitchens during salad and baked potato season. Another good choice is lettuce. Small containers work well for lettuce because their root systems are small. Plant the seeds in early spring for summer harvests or in late summer to enjoy in fall. Our next favourite — for tea, salads, sauces and garnish — is mint. It grows like a weed and smells delightfully fresh. Other options to consider? Cucumbers, peppers, tomatoes, garlic and more inside or out! If you are behind on your planting, garlic is best planted in August or early Fall.

 

4. Grow

 

Gauge how much water and light your plant needs from its growth and how perky its leaves are. Move your plants or adjust your schedule to suit its whims!

 

5. Harvest

 

And enjoy! Freshly grown herbs and veggies taste best eaten as soon as they are harvested.

Community Gardens: Growing Together

 

Gardening doesn’t have to be a solitary activity in the comforts of your own home, or balcony.

 

Community gardens are more popular than ever and can inspire and enhance another level of neighbourly connections and healthy living that we support at University District.

 

Our closest neighbour, The University of Calgary campus, has its own Campus Community Garden that is a celebrated space for personal and communal growing.

 

We had an opportunity to chat with Amanda Mosca, Engagement Coordinator at the University of Calgary’s Office of Sustainability to learn more about how the community garden came to fruition and how the U/D community can be a part of it.

 


How did the Campus Community Garden start?

 

“It was created in 2001 by a group of students who attended a youth sustainability conference, where a key take-away was for youths to put their ideas into action.” says Amanda.

 

“Creating the community garden was an idea that sought to address some of the environmental issues and solutions discussed at the conference. The students wrote a proposal for an organic community garden and submitted it to the President’s Challenge contest, which was approved!”

 

The Community Garden has 61 plots available for rent each season for $20 and plot holders are welcome to grow whatever they like, as long as there are no synthetic pesticides or fertilizers used.

 

“Most people grow fruits and veggies and flowers. There are also communal spaces managed by the student Garden Club, where they grow berries, herbs, fruits and vegetables. We also have two raised beds specifically planted with a wildflower garden to support native pollinators in alignment with our Bee Campus initiative!” says Amanda.

 

Due to the COVID-19, garden operations in 2020 are suspended so accepting new members is not possible at this time. “We hope to reopen next spring.”

How does the community garden work?

 

The Campus Community Garden is owned and managed by the University of Calgary, so preference for plot applications is given to students, faculty and staff, though many community members apply and join the garden too.

 

“Plot holders tend and harvest from rented plots (either individually or as a group sharing a plot) and the communal spaces are maintained and harvested by the student Garden Club. Extra food is often donated to the Student’s Union food bank, and in the fall the club hosts a garden clean up and harvest event where plot holders and club members can share in the harvest.”

 

 

Students involved with the Garden Club at the University can volunteer their time to help maintain the garden and provide social opportunities. These activities include:

 

  • Garden clean up and maintenance in the spring
  • Planting and maintaining the communal areas and shared tools
  • Hosting weekly drop-in events where gardeners can ask questions, share tips and socialize
  • Plan and host other events throughout the season such as an open house, pollinator celebration during Pollinator Week, and fall harvest event
  • Lead tours for various groups on campus
  • Lead and support initiatives such as our Bee Campus initiative
  • Create and share communications with the gardening community

The sky’s the limit to meet these new or changing fitness goals and we have some fun options to help ease that transition. Don’t let another day go by without fitness coming first! This is “your” time and there is no better day than today to put fitness first on your to-do list. We’ve included three fresh fitness ideas around U/D to help get you started.

 

One: Dance at U/D’s North Pond Amphitheatre

 

Let’s begin with one of the most inspiring sights we’ve seen in our community! Outdoor Zumba and barre classes are new to the NW and led by local Calgarian Monica Lopez of Monica Lopez Fitness!

 

 

First, a bit about Monica! Monica trained in jazz, Latin dance and ballet growing up in Mexico.⁣ She is a CanFitPro certified FIS (Fitness Instructor Specialist). She is also certified to teach SoulBody Barre™ and licensed to teach Zumba® and Zumba® Kids + Kids Jr.

 

“During these times of physical distancing, I realized as a group fitness instructor, I was going to lose my workspaces at studios and gyms. I decided to create an online community and teach free classes for people at home,” says Monica.

 

Quickly, a community grew and before long, I found out people were dancing as a family at home with kids, being active and feeling positive! What a great feeling to bring happiness from my living room to theirs through fitness.”

 

 

As the weather improved, Monica and her new online community sought to find a place to dance outdoors. One of her members who lives at U/D suggested it as the perfect venue. “University District was quick to welcome us and I have been teaching there every other week! It is perfect for Zumba because of the design of the amphitheatre where we dance.

 

And for barre classes, the handrails there are at the ideal height! Everyone can see me well and the fountain backdrop is so pretty! It feels like we are in Miami! This is especially true when we play our favourite dance track “Mamacita by the Black Eyed Peas!”

Thirty-five people are able to attend a class with no experience or age limits. Pre- registration and a signed waiver are required. No equipment is needed for the Zumba class. For barre classes, bring a yoga mat and some free weights (3 or 4 lbs as well as a small pilates ball if you have one!) Two: Jump into Action!

 

Maybe dance isn’t quite your forte, or regular jumping jacks doesn’t pique your interest. There are other ways to get off the ground, get healthy, defy gravity and defy lethargy. Another of our favourite ways to work out in the NW takes little time, money or effort: jump rope!

 

 

Did you know there are new ways to skip? Shake off old habits and win the fitness game with a new-fangled jump rope and a motivational app. There are lots to choose from online with tips and tricks, goal setting, leader boards and more. Build endurance by keeping it simple – try a regular 60-second daily skip or challenge yourself to learn how to double under or criss-cross with a weighted rope or a speed rope.

 

Tip: Skipping rope indoors or outdoors, at home or while travelling gets great results and is so versatile! Give yourself lots of room and a soft surface to protect your joints.

 

One fun way to work jumping into your day is to do 50 jumps at the top of every hour throughout the day or every time you enter the kitchen for a homemade cookies like these

 

Three: Learn More New Tricks!

 

Step out of your comfort zone, and into a new sport. Get into the swing of things at the Calgary Golf Academy! A few hours with pros at the Calgary Golf Academy will have you ready for the course in no time. All ages and skill levels are welcome at Calgary Golf Academy, and they also have a ladies-only program.

 

Whether you’re receiving private, couple or group instruction, their unique approach to learning or re-learning the game of golf offers a relaxed, positive and less intimidating fitness experience! Located at the Riverside Club (Memorial Drive at Shaganappi Trail NW), this weather-friendly indoor facility is easily accessible from U/D.

 

 

More Ways to Work Out In NW YYC!

 

The summer is for the great outdoors. And our neighbours at the University of Calgary has some great suggestions from its outdoor homeschool program. Wherever you choose to take to the parks and play outside, there are plenty of options like Edworthy to Bowness, Nosehill and Many Owls Valley to Confederation Park. “Nature play” can get your heart pumping, once a day or once a week –– the benefits are endless.

 

The University team has shared an outdoor fitness gear “Essentials List” to keep you organized, safe and healthy while venturing out and about at U/D.

 

  • An exercise journal
  • A sport and wellness bag, pre-packed for motivation!
  • Weather and season-appropriate jackets to prevent excuses to venture out at any time
  • Active, comfortable footwear
  • Layers of athletic clothing (think breathable, insulated, climate control or sweat control clothing)
  • Sunscreen, a hat, and bug spray
  • A large water bottle and towel
  • Wellness supplies (sunscreen, bug spray, a mask, hand sanitizer etc.)

 

Most importantly when working out, remember your “why” and write down. It’s great to keep it nearby where you work out as a reminder to why you started this journey in the first place!

FINAL TIP: Savour the Stretch!

 


A morning stretch helps limber up for the day, offers a nice break mid-day, and provides a welcome wind down at night. What do you need? Sometimes a good 10-minute stretch in the park or quick yoga stretch session will help. If you’re looking to take it to the next level, check out stretch bands and a foam roller from Sporting Life in neighbouring CF Market Mall!

 

A great way to round out your workout and keep healthy is to meal prep! Traditional and Impactful Ways to Bond with Loved Ones and Community Members

 

When we are kept apart — because of miles, health challenges or simply busy lives — it’s important to put a little extra effort and imagination into reconnecting, staying connected and enriching connections.

 

The difference between feeling lonely and being alone is significant and can impact a person’s quality of life whether it be a neighbour, family member, friend, or perhaps your own. It’s important to take a pause and consider whether you and those you encounter can benefit from quiet time alone. Or, could the challenges of loneliness be a cause for concern?

 

 

Tip: University of Calgary Department of Psychology Professor Dr. Keith Dobson talks about ways to tell if something isn’t right, and strategies for support if people aren’t doing well. Give this podcast a listen.

 

Though technology is integrated into day-to-day life, with Facetime and Zoom, Google Hangouts and Emoji-filled texts, nothing tops traditional acts of kindness, care, and affection. At U/D. we have a few ideas up our sleeves to warm hearts and minds — yours and those who matter to you, or even strangers.

 

 

We can feel a little lonely from time to time, especially during the unprecedented times of COVID. Becoming technology weary is likely, so it’s a great time to reconnect the old-fashioned way – where acts of love and kindness, even at a distance, can go a long way. There are different ways, whether a small or big gesture, to show that appreciation for others.

 

But first, let’s talk about the quality and value of relationships — family, friends, neighbours — to achieving positive emotional health.

Did you know?

 

  • Studies have concluded that chronic loneliness increases our risk of an early death by 14%.
  • Around the world, loneliness is emerging as a public-health problem, contributing to depression and anxiety and to coronary heart disease and stroke.
  • Quality relationships — where we share our feelings, thoughts, and experiences with another — reduce stress, boost immunity, lower blood pressure and cholesterol, lower long-term health and longevity risks.

 

 

Loneliness knows no difference between ages or lifestyles, and can affect people who live alone or with others. Senior citizens, parents, teens, empty nesters, new Calgarians – no one is immune. At U/D, we encourage community members and Calgarians to break down barriers, help others, and rediscover how to connect on a personal level.

 

Here are some less-common ideas for bridging loneliness and to form deeper bonds in fun, simple ways.

 

If you need someone to talk to, visit Alberta Health Services website for suggestions of facilities and services. Or connect with the team at Kids Help Phone Canada, or the Distress Centre Calgary for 24-hour support. 

 

 

STRANGER? NO DANGER!

 

Don’t be shy. Put down your phone, put on a smile and strike up a conversation with someone new to you. Whether at the dog park, the grocery aisle, your building elevator or a local cafe, shedding fear of rejection could be your ticket to better connections. Here are some easy, tiny steps to start conversations:

 

  • Get outside at least once a day if you are able to
  • Make eye contact and share a smile with everyone you encounter
  • Be the first to say hello
  • If you meet someone walking a pup, ask about the breed, name or age as a way to break the ice.
  • Invite someone to tell you something that they want to share with a simple “Tell me about you!” or “What’s been the highlight of your day today?” or “Having fun?”
  • Share a window wave! If you have a pet, hold them up to the window and wave a paw to passers-by. Or hold up a happy message on a sign to surprise a neighbour and spark a laugh. These little moments go a long way to brighten a day.
  • Compliment a neighbour’s outfit, garden pot or their smile as you pass by to boost their spirits and pride.
  • Do one thing a day that will make someone smile. Small initiatives to show you care can create bonds with new friends and stronger neighbourly ties!

 

 

DO YOU FEEL ME?

 

Take time to connect with the people who share your four walls and roof. Have that deep, meaningful conversation that hasn’t happened in a while! Go beyond the news of the day and the weather forecast, what’s happening with the family or day-to-day activities.

 

Tip: Here’s a list of three ways sure to spark deeper dialogue around the dinner table.

 

  • Play two truths and a false where each person shares three things from their day and the others have to guess which is false!
  • Ask silly-to-soulful questions like: “If you came with a guarantee–like so many products do–what would you guarantee about yourself?” Or, pick up a Chat Pack: New Questions to Spark Fun Conversations Cards.
  • Lay the table with special items that reflect memorable events or have sentimental value: a wedding present, a vintage plate, a special occasion vase filled with cheery flowers. Each object evokes a special memory or emotion so use these as a backdrop to spark discussion, reminisce, and share how they’ve brought happiness or have impacted your life.

The art of the letter should never be a lost art. A quick note or letter to a loved one is often so special it becomes a “keeper.”

“In Banff, take advantage of Parks Canada’s fully equipped campsites (read: just show up!) at Two Jack Lake. Sites include a six-person tent, fire pit with wood, camp stove, propane tank and lantern, so you only need to bring food and sleeping bags. Those who are more into glamping can make the drive up to Elk Island National Park near Edmonton, and sleep in an A-frame, canvas-style oTENTik which combines the comfort of a cabin with the feel of being outdoors.”

Swap smart: Cheese selection matters!
